One of the best parts about Thanksgiving is the leftovers, but sometimes it can be hard trying to come up with fun creative ways to eat all of the leftovers besides reheating them. There’s always the classic turkey sandwich and heck, you could even make a calzone out of your leftovers. If you’re looking for new ways to enjoy your Thanksgiving leftovers try these recipes for fried stuffing balls and mashed potato pancakes. They are both really easy to make and take no time at all.
Fried Stuffing Balls:
Ingredients:
- Leftover Stuffing
- Egg
- ¼ Cup Milk or Water
- Breadcrumbs
- Oil (for Frying)
Steps:
- Take your leftover stuffing and shape them into balls, it should be cold that way the balls will hold their shape
- 2. Set up a breading station; combine the egg and milk or water into a bowl and add breadcrumbs to a separate bowl
- With one hand drop the balls into the egg mixture, then drop them into the breadcrumb bowl, with your other hand evenly coat the balls in breadcrumbs
- In a pot heat a neutral oil like vegetable or canola to 350 degrees
- Drop a few balls in at a time and fry until golden brown
- When they are done cooking drain them on a paper towel-lined plate or tray
- Serve with leftover gravy and/or cranberry sauce for dipping

Mashed Potato Pancakes:
Ingredients:
- Leftover Mashed Potatoes
- 1-2 Eggs
- ¼ Cup Flour
- Salt
- Pepper
- Garlic Powder
- Onion Powder
- Optional:
- Chives
- Cheese
- Sour Cream or Applesauce (for dipping)
Steps:
- Combine leftover mashed potatoes, eggs, flour, garlic and onion powder, and chives/cheese if using, make sure the mixture isn’t too thin
- In a pan on medium-high heat add a neutral oil and add about ¼ cup of batter for each pancake
- Brown on both sides
- Serve with sour cream, applesauce, or any other dipping sauce you want (you could also use gravy)
- Enjoy!

For Friendsgiving this year, my friends and I decided to bring our leftovers because we were having it after Thanksgiving.
