Two years ago I spent the summer in Greece for a study abroad trip. While I was there I had such amazing food and one dish that I missed the most when I came back was tzatziki which is a yogurt, cucumber dip. It’s much more than just a simple dip for pita bread; you can put it on a burger or on flatbread with falafel (which is what I did, you can find falafel mix at most grocery stores). It is also really easy to make and tastes great.
Ingredients:
- 1 cucumber
- 1 small container of Greek yogurt
- 2 cloves garlic, minced
- 2 tbs olive oil
- 1 tbs white vinegar
- ½ tsp salt
- 1 tbs fresh dill, minced (optional)
Steps:
- Combine garlic, olive oil, vinegar, and salt with the yogurt
- Cover and refrigerate it anywhere from 30 minutes to overnight (the more it sits the better it tastes)
- Grate the cucumber into a paper towel lined bowl so the excess water can drain
- Pro tip- put something heavy like a mug or a glass on top to help the excess water drain
- Add the grated cucumber and dill into the yogurt mixture
