You open your pantry, look around and settle on a cup of ramen noodles for the third day in a row, despite having a deli and bakery just downstairs. The problem is that you aren\u2019t sure how to cook with the ingredients and it is too expensive to eat out for every meal. Kind of a bummer, right?\u00a0<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">It is chef <\/span><b><span data-contrast=\"auto\">Mark Molinaro\u2019s<\/span><\/b><span data-contrast=\"auto\"> mission to make sure this doesn\u2019t happen for the 18 rising sophomores preparing themselves (and their tastebuds) for a semester in Italy, fully funded by the Dorrance Scholarship. The students teamed up with Molinaro in the School of Hotel Restaurant Management to learn about the gastronomy of Italy and practice some basic cooking skills to ensure they can take full advantage of the unique Italian cuisine.\u00a0<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">\u201cStudying abroad is an enormous investment on many levels including financial, emotional and psychological, but the payoff, in my opinion, is worth it,\u201d Molinaro said.\u202fThe cooking class was meant to engage students on a few of these levels, so they felt adequately prepared for their time abroad. \u202f\u202f<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">The Dorrance Scholarship is a need-based award that provides funding to students for all four years of college, including the option to study abroad. The goal for the foundation is to instill college-going traditions in future generations of Arizona families.<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">In addition to covering the cost of tuition, housing, meals and the study-abroad experience, the scholarship also gives students a food stipend, allowing them to go to the local markets and interact with local purveyors to buy fresh meats, cheeses, fruits and other groceries. Molinaro wanted to make sure that students had a basic toolkit of techniques they can replicate while in Italy, like teaching knife skills, seasoning, pairing and fat-acid balance. \u202f<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">Dorrance Scholar <\/span><b><span data-contrast=\"auto\">Anaya Henderson<\/span><\/b><span data-contrast=\"auto\">, a sophomore studying parks and recreation management, is one of the students preparing for the semester in Orvieto, a small town situated halfway between Rome and Florence.\u00a0<\/span><span data-ccp-props=\"{}\"> <a href=\"http:\/\/in.nau.edu\/news\/wordpresst\/uploads\/sites\/153\/wp-content\/uploads\/2022\/06\/Screen-Shot-2022-06-20-at-8.53.59-AM.png\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-66350 alignright\" src=\"http:\/\/in.nau.edu\/news\/wordpresst\/uploads\/sites\/153\/wp-content\/uploads\/2022\/06\/Screen-Shot-2022-06-20-at-8.53.59-AM.png\" alt=\"\" width=\"297\" height=\"197\" srcset=\"https:\/\/in.nau.edu\/wp-content\/uploads\/sites\/402\/2022\/06\/Screen-Shot-2022-06-20-at-8.53.59-AM.png 901w, https:\/\/in.nau.edu\/wp-content\/uploads\/sites\/402\/2022\/06\/Screen-Shot-2022-06-20-at-8.53.59-AM-300x199.png 300w, https:\/\/in.nau.edu\/wp-content\/uploads\/sites\/402\/2022\/06\/Screen-Shot-2022-06-20-at-8.53.59-AM-768x509.png 768w\" sizes=\"auto, (max-width: 297px) 100vw, 297px\" \/><\/a><\/span><\/p>\n<p><span data-contrast=\"auto\">\u201cOver the last few weeks, the Dorrance Scholarship has been preparing us for the culture change of studying abroad,\u201d Henderson said. \u201cI am anxious about the change in environment, but I feel more prepared after receiving exposure to Italian workshops, first-hand stories and intercultural development.\u201d<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">Though Henderson cooks for herself at home, she was not familiar with Chef\u2019s key lecture\/teaching\/lesson\u2014that food is for tasting, not just for eating. She not only learned how to prepare a traditional margherita pizza, but also how food is appreciated in Italian culture.\u00a0<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">Chef also showed the students the types of products they will most likely encounter and how they can be put together to build a baseline and develop confidence to try more.<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">\u201cLastly, I gave students some insight into how our bodies work when we appreciate food,\u201d Molinaro said.\u202f\u201cWe eat first with our eyes. \u2026 Then, we smell.\u202fWhen we are cooking, we listen for the sounds the food is making.\u201d<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">\u202f<\/span><span data-ccp-props=\"{}\">\u00a0<\/span><span data-contrast=\"auto\">The class was split into four groups, each with their own recipe that contributed to a large feast shared by all the students\u2014pizza, pesto, grilled meat and veggies, focaccia and caprese salads. Otherwise, it may just sound uninteresting or even annoying.
