So, where exactly is this dream kitchen? Many would argue it\u2019s at the Culinary Institute of America (CIA)\u2014located in Napa Valley, the heart of wine country in the United States.<\/p>\n\n\n\n<p>Northern Arizona University students who earn a bachelor\u2019s\nof science degree in Hotel and Restaurant Management (HRM) now have the option\nto attend CIA for the Accelerated Culinary Arts Program (ACAP)\u2014a 10-month program\nthat incorporates the courses HRM students have already taken at NAU and counts\nthem toward the ACAP certificate.<\/p>\n\n\n\n<p>NAU is continually ranked in the top 10 for best hotel and\nrestaurant management programs in the world, but does not have a program\nspecific to culinary arts. The new 4 + 1 program (four years at NAU spent earning\na bachelor\u2019s degree combined with one year earning the ACAP certificate at CIA)\nallows interested students to explore the art of cuisine.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/in.nau.edu\/news\/wordpresst\/uploads\/sites\/153\/wp-content\/uploads\/2019\/11\/Picture3.png\" alt=\"\" class=\"wp-image-57976\" width=\"298\" height=\"162\" srcset=\"https:\/\/in.nau.edu\/wp-content\/uploads\/sites\/402\/2019\/11\/Picture3.png 474w, https:\/\/in.nau.edu\/wp-content\/uploads\/sites\/402\/2019\/11\/Picture3-300x163.png 300w\" sizes=\"auto, (max-width: 298px) 100vw, 298px\" \/><\/figure><\/div>\n\n\n\n<p>\u201cThis innovative certificate program awarded by the CIA\nprovides yet another amazing opportunity for our NAU students wanting to study\nculinary management at the world\u2019s premier culinary management school,\u201d said <strong>Frederick\nDeMicco<\/strong>, executive director and professor in HRM, who also is a founder of\nthe CIA Greystone, Napa Valley ACAP Certificate. \u201cThe Greystone campus is an\namazing educational venue located in world-renowned vineyards and fields of fresh\nproduce.\u201d<\/p>\n\n\n\n<p>In addition to spending time in the kitchen, students learn\nhow to incorporate fresh and best-in-season\ningredients from the region while acquiring the skills needed to pair\nworld-class wines with cuisine.<\/p>\n\n\n\n<p>\u201cThe Culinary Institute of America is one of the premiere\nschools delivering powerful educational programs,\u201d chef and HRM professor <strong>Mark\nMolinaro<\/strong> said. \u201cThe CIA is well established in the industry and the alumni\nnetworks are organized and supportive.\u201d<\/p>\n\n\n\n<p>While attending CIA Napa Valley Greystone Campus, students\nwill learn from a variety of faculty, including professors, master chefs, food\nexecutives, restaurant owners and master sommeliers. After graduating with\ntheir certificates, students join the CIA alumni network and are provided\nopportunities to connect with more than 50,000 people in their field throughout\nthe world. The winery includes several kitchens, classrooms and\nan auditorium in addition to restaurants, retail space and a student-run garden\nfor herbs and produce.
